When it is harvest time, I go pumpkin crazy! Everything and anything I can make with pumpkins becomes a main focal point of the season. A yummy delight that is a major hit every year is my Pumpkin Chai Lattes. I don’t add coffee to mine but you could do that if you are inclined and it would be awesome, too 🙂
Here is what you will need:
~ 1 small baking pumpkin (I always use fresh, organic pumpkin but you can take a short cut and use canned if you want :0) )
~ Chai spices (cardamom, nutmeg, clove, cinnamon, ginger)
~ Almond Milk
~ Dairy or Dairy-free whip for fun topper
Here is what to do:
~ Combine the pumpkin, small pinches of the chai spices (it is easy to overdo here so use a light hand) and almond milk in a blender or food processor
If you want them hot then either use pumpkin hot from the oven, heat the milk before adding or just heat the whole mixture after blended. For a frozen treat, add ice to the blending mixture.
Add a dollop of the whip to the top and enjoy! (you can also dust the whip with cinnamon, cacao powder or nibs, or anything else!)
